These St. Louis-style ribs start with richly marbled heritage Duroc pork—chosen for its deep flavor and tender texture. We rub them with a savory blend of cracked pepper (what gives it the one chili!), garlic, fennel, and a hint of bay. A touch of porcini adds earthy depth without overwhelming the smoke.
Slow-cooked over oak and cherry for a clean finish and a whisper of natural sweetness. Served 'unsauced', with our house BBQ riding shotgun.
