Our full rack features approximately 12 St. Louis-style ribs, generously seasoned with a savoury blend of cracked black pepper, garlic, fennel, bay, and a touch of porcini mushroom. With no added sugar in the rub, the flavour is clean, rich, and deeply savoury, allowing the smoke and the quality of the pork to take centre stage.

Each rack is smoked low and slow over cherry wood until the meat yields cleanly from the bone, then served unsauced with our house BBQ sauce on the side, so you can enjoy them as they are or add a touch of sweetness if you prefer.
