Advisor: Chef Wayne Buchanan
Chef Wayne has been cooking professionally for over 16 years, but what really sets him apart is how he thinks about food. He’s not chasing trends or trying to overdo it. He’s focused on what makes a dish truly memorable: deep flavor, thoughtful technique, and fresh ingredients.
From the start, he’s had a way of cutting straight to what matters. During our first menu review, he stopped halfway through, looked up, and said, “Where’s the mac and cheese?” Then just shook his head: “You can’t open without it on the menu.” No debate. Just one of those moments where you know he’s absolutely right.
We connected over a shared belief in doing things with intention. He’s helped us look closer at how we plan, prep, and serve—not just to get it right, but to make sure it feels right.

Pat LaFrieda Meat Purveyors is a fourth-generation butcher shop based in North Bergen, NJ, known for sourcing top-quality beef, pork, poultry, veal, lamb, and wild game from small domestic farms. Their dedication to craftsmanship, consistency, and responsible sourcing aligns closely with our values, making them a key partner in helping us deliver incredible flavor with every order.

Wayne Meat Corporation
Wayne Meat Corporation has been a trusted, family-owned butcher in Wayne, NJ since 1972, known for its commitment to quality, consistency, and personal service. Now in its third generation, the Powers family continues to uphold their founder’s motto—“No one regrets buying quality”—offering USDA Choice and Prime meats, Grade A poultry, and specialty cuts prepared with old-world craftsmanship. Their custom portioning, USDA-inspected facility, and hands-on approach make them an ideal partner for bringing our BBQ to life.

J&R Manufacturing
J&R Manufacturing is our trusted partner for high-performance smoking equipment, designing and building their signature Oyler Pit and other commercial-grade smokers, grills, and rotisseries in Mesquite, Texas since 1974. Founded on the original Oyler Pit—one of the first thermostatically controlled, 100% wood-fired units—they’ve pioneered innovations that optimize heat and smoke flow for superior flavor, tenderness, and consistency. We partner with J&R because their equipment lets us cook with real wood, real fire, and precise control—giving us the consistency we need without sacrificing authenticity.
